LOVE CAKE

Ingredients
Maida
1 ¾ cup (175g)
Semolina (Suji)
1 cup (100g)
Butter
100g
Eggs
4
Powdered Sugar
¾ cup (100g)
Cashew nut
200g, minced
Candied pumpkin (Petha)
100g, chopped
Cardamom powder
½ tsp
Nutmeg powder
¼ tsp
Clove powder
¼ tsp
Cinnamon powder
¼ tsp
Honey
1 tbsp
Lemon rind, grated
1 tsp
Vanilla essence
1 tsp
Almond essence
1 tsp
Rose essence
1 tsp
Method
1.  Grease an 8" diameter baking tin and dust it with maida. Pre-heat the oven to 180ºC.
2.  Dry roast suji and mix with butter. Keep aside.
3.  Separate the eggs. Beat the egg whites stiff and keep aside.
4.  Beat the egg yolks with sugar till light and creamy. Add the suji mixture and mix well.
5.  Add cashewnut, candied pumpkin, spice powder, honey and lemon rind. Add all the essences and mix well. Fold in the egg white.
6.  Pour the batter into the baking tin and bake in the preheated oven for almost 1 hour or till the tooth pick inserted in the centre of the cake comes out clean.
7.  Remove from oven, cool for a while. Loosen sides of cake, using a knife if necessary. Turnout over a wire rack/plate lined with cloth (to absorb moisture) and cool slightly before cutting into pieces.
