COFFEE CHIFFON CAKE WITH SATIN ICING

Ingredients
NESCAFÉ Classic Coffee
2 tsp
Hot water
2 tbsp
Maida
½ cup(50g)
Salt
½ tsp
Baking Powder
1 tsp
Sugar, powdered
½ cup (65g)
Eggs
2
Oil
2 tbsp (12g)
Vanilla essence
1 tsp
Cream of Tartar/Lime juice
¼ tsp
Satin Icing
.
Sugar, powdered
1cup (125g)
Water
2 tbsp
Egg white
1
Vanilla essence
1 tsp
Strawberry, sliced

Method
1.
Preheat the oven to 180º C.
2.
Mix NESCAFÉ coffee powder in hot water and keep aside.
3.
Sieve maida, salt and baking powder into a bowl. Keep aside 3 tbsp sugar and mix the rest into the maida.
4.
Separate the eggs, keep the whites aside in a clean bowl.
5.
Make a well in the centre of the maida mixture. Add egg yolks, oil, coffee solution and vanilla essence;, beat the mixture well till smooth.
6.
Beat the egg whites till frothy. Add the cream of tartar and continue beating till soft peak form. Gradually beat in the 3 tbsp of sugar and continue beating until stiff peaks form.
7.
With a rubber spatula or wire whisk, gently fold in the egg white mixture into the maida batter until just blended.
8.
Pour the batter into an ungreased heart shaped pan and bake for about 30 minutes, until the tooth pick inserted in the centre comes out clean.
9.
Remove from oven. Cool for 5 minutes. Remove the cake onto a serving dish.
10.
For Satin Icing:
Heat the sugar and water in a pan on a low flame for 5 minutes without stirring. Remove from fire.
11.
Beat the egg white till frothy. Slowly trickle the hot sugar syrup into the egg white and continue beating till soft peaks form. Add essence and beat till stiff peaks form.
12.
Spread the icing on the cake. With the back of the spoon, form peaks at intervals. Decorate with sliced strawberries.
