CHILLI CHICKEN

Ingredients
MAGGI Magic Cube – Chicken
2, crumbled
Chicken
500 g, cut into small pieces
Soya Sauce (dark)
2-3 tbsp
Vinegar
1 tbsp
Garlic, chopped
1 tsp
Ginger, chopped
1 tsp
Oil
3 tbsp.
Spring Onions
2, chopped (keep the greens separate)
Cornflour
1½ tbsp
Water
1½ cup (225 ml)
Green Chillies
5, deseeded and slit
Whole Red Chillies
5, deseeded and slit
Capsicum
1, chopped
Method
1.  Marinate chicken in 2 tbsp soya sauce, vinegar, chopped garlic, ginger and crumbled cubes for ½ hour.
2.  Heat oil. Keep the marinade aside and fry only the chicken. Keep chicken covered for 5 minutes and then fry without cover on medium flame for 15-20 minutes or till done and dry. Add spring onion, chillies and capsicum. Toss & remove from fire.
3.  Mix together the cornflour and water with the leftover marinade, and bring to a boil. Immediately pour over hot cooked chicken.
4.  Serve hot garnished with spring onion greens.
Tip
For a nutritionally balanced meal, serve chilli chicken with hot and sour soup and chilli garlic noodles/ vegetable fried rice.
